Kuzhi Paniyaram

Kuzhi paniyaram is a specialty chettinad dish. This is sometimes a weekend breakfast recipe in my house. It goes along good with the red chutney. 



This is what you need:


For the batter:

Idli rice - 1 cup
Raw rice - 1 cup
Urad dal - 1/2 cup
Fenugreek seeds/venthayam - 2 tbsp
Rock salt - as required.

For the seasoning:

Mustard seeds - 1 tbsp
Urad dal - 1 tbsp
Curry leaves - 2-3 strands
Grated coconut - 3-4 tbsp
Chopped small onions - a handful

This is what you do:

Soak the ingredients given under for batter for 2 hours. Grind them to idly batter consistency and let it ferment overnight.

Heat some oil in a pan, add the mustard seeds, urad dal and curry leaves. Once they splutter add this along with the grated coconut and small onions to the batter.

Grease the kuzhipaniyaram dish with little oil the night before.

Now pour some oil in all the holes and heat them. Pour the batter in the holes. Once one side is done, gently filp over to the other side and add little oil.

Kuzhipaniyaram can be served with red chutney.
