Been exploring a lot of Pan Asian Cuisines and wanted to make Spaghetti in a different way. With bottles of peanut butter at home which I use for baking, when I found we can make a sweet and spicy sauce out of it, I was waiting to try it out.
You can use any Pasta and even noodles in this recipe in place of Spaghetti. This packet of 100% Whole Wheat Spaghetti was lying at the back of my counter and I wanted to find a way to use it.
You can even add pan fried Tofu or Paneer to the recipe. I just used Garlic, Onion and Capsicum.
Sweet and Spicy Sesame Peanut Sauce Spaghetti:
This involves three steps,
1. Cooking the Spaghetti/Noodles/Pasta
2. Making the Sweet and Spicy Sesame Peanut Sauce
3. Tossing them all together with the Veggies.
What you need:
1 Pack or 200 Grams Spaghetti/Noodles/Pasta Cooked Al Dente as per pack instructions
1/3 Cup Peanut Butter (Either Creamy or Chunky)
2 Tbsp Soy Sauce
2 Tbsp Rice Vinegar (I used White Wine Vinegar, you can even use Apple Cider Vinegar)
2 Tbsp Brown Sugar
3 Tbsp Sesame Oil (I was surprised they use this, maybe the flavour is different but I used our nalla ennai or Til Oil)
1/3 Cup or more water as needed
100 Grams Tofu or Paneer cubed
3 Garlic Cloves minced
1 Onion sliced
1 Bell Pepper sliced
1/4 cup roasted peanuts crushed

What you do:
- In a bowl, mix the peanut butter, soya sauce, rice vinegar, brown sugar and 1 tbsp sesame oil.
- Dilute this with water and add more if required. It should be creamy and pour-able, but not runny.
- Coat the bottom of a large pan with another tablespoon of Oil and pan fry the tofu or paneer.
- Push the tofu or paneer to one side of the pan, and add the remaining oil.
- Add the garlic, onion and capsicum and saute till fragrant.
- Now bring the tofu/paneer to the veggies and add the noodles and sauce to the pan and toss well.
- Sprinkle the crushed roasted peanut before serving.
This is a complete meal in itself, healthy and filled with so much flavour. If you love peanuts, you will be making this time and again!
