Palak or Spinach is a versatile green that can be blended in many dishes. You can add it to rice to make pulao, add it to atta and make rotis or puris and here I have made the quite popular paneer dish with palak that goes well with rice or rotis.
The Palak I used is home grown and the Paneer is also home made! 😃
Palak Paneer:
What you need:
1 Cup Palak
2-3 Green Chillies
1 Tbsp Oil
1 Tsp Cumin Seeds
3-4 Dry Red Chillies
1 Cup Onion Chopped
5-6 Garlic Cloves
1 Tomato Chopped
Salt To Taste
200 Grams Paneer Cubed
1 Tsp Lemon Juice

What you need:
1 Cup Palak
2-3 Green Chillies
1 Tbsp Oil
1 Tsp Cumin Seeds
3-4 Dry Red Chillies

Salt To Taste
200 Grams Paneer Cubed

What you do:
- Blanch the Palak or Spinach in 3-4 cups boiling water for a few minutes.
- Puree the spinach with green chillies and keep aside.
- Heat oil in a pan and add cumin seeds and dry red chillies and let it splutter.
- Add onions and saute till translucent.
- Add garlic and saute for a couple of minutes
- Add tomato and saute till tomatoes are mushy
- Grind this onion tomato mixture and keep aside. (Salt is not added as this is a spinach recipe and it will be added in the end)
- Heat some oil in a pan and add the palak puree and onion tomato puree and let it come to a boil.
- Add the paneer cubes and simmer for 10 minutes.
- Add salt and switch off the flame.
- Serve with rice or roti.
