Spicy Tomato Rice.

When you are bored to cook a full course meal, you make want to just make a rice and fry some papads. That is what I did today afternoon. I made some spicy tomato rice and masala papads to go with it. It took not more than 45 minutes to finish making lunch.
How to cook Tomato rice...
Here is how I made it.


You would need:
1 cup Basmati rice
2 onions sliced
3 tomatoes finely chopped
A couple of green chillies sliced
3 pods Garlic finely chopped
Ginger paste (You can have 2 tbsp of ginger garlic paste, I had only ginger paste, hence chopped the garlic)
Sambhar chilli powder as required.
Salt as required










For tempering:
Ghee
2 cloves
1 elachi
1 inch cinnamon stick
Mustard seeds
Urad dal
Cumin seeds


This is what you do:


Soak the rice for 30 minutes. I used raw rice, but using basmati is best preferred due to the long grains and the taste it adds.




Heat ghee in a pan. Add all the spices for tempering.Now add Ginger and garlic.




Once the aroma comes, add onion. Saute onions till it becomes translucent.




Add the tomatoes and green chilli. Saute for 2 minutes.




Now add the sambhar chilli powder and salt.


Saute till the raw smell goes.


Add the rice and mix it well. Keep it on heat till the water is absorbed.




Now transfer the contents to a pressure cooker, and add 1 and a little less than 1/2 cup of water, since it is tomato rice and we dont want it to get soggy.




Let the water to boil and pressure cook for one whistle or for 20 minutes.


Fry some papads, and Tomato rice is ready to be served.


I could not click the finished picture, coz by the time I could click it. The rice was over :p. So hungry were we!
