Mushroom Biryani

This is one of my favorites and which was loved by all in the family. If you like Mushroom, then this recipe is for you. Moreover, Mushrooms are very healthy and tasty when cooked right.

How to cook Mushroom Biryani...
All that you need:
Finely chopped Mushroom – 200 gms (button mushrooms)
Biryani rice – 2 cups
Curd – 1 cup (The thicker the better)
Ginger garlic paste – 1 tbsp
Finely chopped onions – 2
Turmeric powder – 1 tsp
Red Chilli powder – 3 tsp
Dhania powder – 2 tsp
Garam masala – 2 tsp
Finely cut corriander – 1 cup
Mint leaves – 1 cup
Finely chopped Tomatoes – 1 cup
Salt – to taste
Ghee or butter as reqd.
Aniseed/Fennel/Saunf seeds (Sombu) – 1 tsp
 
How you go about it:
First whisk the curd with turmeric powder, red chilli powder, dhania powder, garam masala, ginger garlic paste, corriander, mint leaves, tomatoes and salt.You should get a thick batter.
Then soak rice, drain the water.You can use raw rice, but basmati rice does add a certain flavor.
 Heat oil or ghee in a pan (ghee if you arent worried too much on the fat side :p, I prefer oil, even though ghee helps to make it more rich in flavor), add aniseed (make sure you dont burn them, I tend to do it when I used to cook initially, You can avoid it by keeping the flame low) and onions, saute it for sometime till the onions are translucent.
 Add the rice and let it fry for sometime, it should become a light brown. then add 1 and half the quantity water as that of rice and close the lid on pan for 15 minutes (Be sure of the water, it should just be right, coz if added more water, u will end up with mashed rice, and rem there is water in the curd mixture too).
Heat oil and ghee in another pan, and add the mushroom and saute it till the raw flavor of the mushroom dissapears. Now add the curd mixture and let it cook. Check for taste and cook till water simmers. Now take it from flame and add it to the rice and mix thoroughly with rice.
Serve with garnishing of coriander leaves along with a raitha of your choice!
A tasty lunch is ready to be abducted!
