Shahi Paneer

Shahi indicates royalty. And this dish can be made in the royal way using fresh cream and cashewnut paste along with milk. But I skipped it due to the extreme richness in the dish.

How to cook Shahi Paneer...
This is what you need:

200 gms paneer cut into cubes
2 onions sliced into thin strips
1 tomato finely chopped
3 green chilies slit

Salt as required
Ghee as required

This is what you do:

Heat ghee in a tava, and fry the paneer till they are golden brown.
Soak them in warm water with salt to keep them soft.

Heat some ghee in a pan. Add the onions, green chilies and cardamon. Saute till the onions turn translucent.
Add the tomatoes.Saute till the tomatoes become tender.
Add curd to this.
Saute for 2 minutes.
Cool this mixture and blend them.
Heat ghee in a pan, add the blend mixture, red chili powder, garam masala and salt.
Saute till the raw smell goes.
Add the milk and paneer and let it boil for 2 minutes.
Shahi paneer is ready to be served. And it goes best with roti and jeera rice.
