Spring Roll with noodles filling

Spring roll is usually made with a filling of vegetables, and it is predominantly dominated by lettuce, but it can be made with different fillings too. Since I had too much home made noodles left at home, I wanted to make spring rolls out of them. The process would be much easier if we had spring-roll sheets. But I was not patient enough to check around to see if it were available, and made it all from the scratch.

How to Cook Spring Roll with noodles filling...
Get these before you begin:

For spring roll base:
1 cup flour
1 tsp of oil
Salt
Water

For the filling:
1 cup of vegetables cut length wise (beans, carrots, capsicum and lettuce)
1 onion sliced lengthwise
1 packet home made noodles
1 tbsp ginger garlic paste
1 tbsp tomato sauce
1 tbsp soy sauce
1 tsp vinegar
Olive oil.
1 cup of cheese sliced into strips.
Salt

This is what you do:

Mix the dough to chapati dough consistency and keep aside.

Boil the noodles with some salt and a little oil. And spread it out in a plate, so that it does not stick.

Half boil all the vegetables. Dont let it boil too much. It needs to retain its crunchiness.

Heat some olive oil in a pan. Add onions. Saute till it is translucent. Then add ginger garlic paste. Saute for some time till the raw smell disappears.

Now add the boiled vegetables. Mix it well with the onions.

Add all the sauces and vinegar.

Add salt and check the seasoning.

Now add the noodles and stir it once with the vegetables. Filling for the spring roll is ready.

Divide the dough and roll it out like chapathis. A little thinner than chapathis.

Add a little of the filling to them along with some cheese.

Roll it carefully and seal the ends using a paste of flour in water. In the same way make the remaining rolls.

Heat oil in a pan and fry the spring rolls till golden brown.

It is ready to be served with sauce.
