Corn Peas Pulao
Out of ideas for the lunch box? Bored of usual Vegetable Pulao?.Here is a very simple Corn and peas pulao for a busy morning to pack in your lunch box. Loved by your better half as well as your children.

This is what you need:

1 cup Basmati Rice
1 cup Corn
1 cup Peas
2 cups Milk
2 medium size Onions sliced
1 medium size Tomato sliced
2-3 Green chillies slit
2 tbsp Ginger Garlic paste
1 tbsp Red chilly powder
2 tbsp Pepper powder
Salt as reqd.
2 tbsp Lemon juice

For seasoning:

1 tbsp Butter
1 tbsp Oil
1 inch Cinnamon
2 Cardamon pods
2 Cloves
1 Bay leaf
1 tbsp Cumin seeds

This is what you do:

  • Soak the rice for 30 minutes
  • Heat butter and oil in a pan
  • Once butter melts, add all the ingredients under seasoning
  • Add the sliced onions and saute till transparent
  • Now add the ginger garlic paste and green chillies and saute till the raw smell disappears
  • Add the corn and peas and mix it well
  • Add the sliced tomatoes and saute till tomatoes are tender
  • Add Red chilly powder for flavor. (optional)
  • Now add 2 cups of milk
  • Add Pepper and required salt. (The water in the pulao should be salty, that indicates the right amount of salt)
  • Add the basmati rice
  • Squeeze 3-4 drops of lemon juice
  • Close the lid and let it simmer for 15-20 minutes or till the rice is done.
  • Serve with raita.
