Palak Rice

Palak Rice
This is yet another lunch box idea, if you just need a one pot dish. Have tried experimenting with Palak many times. Palak Paneer, Dal Palak, Palak bake and so on. Never tried a rice recipe. Was hard pressed for time today, so made this rice in a jiffy.

This is what you need:

1 cup Basmati rice
1 cup Palak or Spinach
2 medium size Onions sliced
1 Tomato sliced
2 tbsp ginger garlic paste
4-5 Green chillies
1 tbsp Ghee
1 tbsp Oil
2 tbsp cumin seeds
2 cups Milk.

This is what you do:

  • Soak the rice for 30 minutes and drain the water
  • Blanch the Palak in boiling water and drain the water
  • Grind the Palak and green chillies to a smooth paste
  • Heat the ghee and oil in a pan
  • Add the cumin seeds
  • Once they splutter, add the sliced onions and saute till transparent
  • Add the ginger garlic paste and saute till the raw smell disappears
  • Add the tomatoes and saute till mushy
  • Add the Palak puree and mix well
  • Now add the milk and required salt
  • Add the rice and let it simmer covered for 15-20 minutes
  • Serve with Raita
