Copy Cat Maggi Noodles at Home

I have banned a lot of foods at home from outside for my kids. In this past year I have not brought a packet of Maggi nor have we ordered in Pizza or brought bread loaf from the store!

But, this made me work on making them at home and my whole wheat pizzas have a great response from my Whisk' N Creme' customers and I bake whole wheat or all purpose flour bread loaves now and then for the family. Though those recipes can't be shared as they are my business recipes, I can share my maggi taste-maker! :p

This noodles is made with hakka noodles, and tossed with a home made maggi taste-maker with vegetables. It is not sticky and slurpy like Maggi, but tasted almost the same. Some of the powders I use for the taste-maker may not be available in common in your pantry, but if you want to make maggi or love maggi and will be doing it often, its best to buy these powders. They are available with this brand called 'Keya' or if you know of a baking supply store near you they will have it as 100 gram pouches.


Copy Cat Maggi Noodles:

Making the noodles involves three steps,
1. Cooking the noodles - I use Hakka noodles here, so I cooked it Al Dente as per pack instructions.
2. Making the Maggi Taste-Maker
3. Tossing the Vegetables, Taste-Maker and Noodles together.

What you Need:

2 Packs Hakka Noodles Cooked Al Dente
1 1/2 Tsp Onion Powder
1 1/2 Tsp Garlic Powder
1/2 Tsp Ginger Powder
1 1/2 Tsp Coriander Powder
1 Tsp Chilly Powder
1/2 Tsp Turmeric Powder
1 Tsp Cumin Powder
1 Tsp Black Pepper Powder
1/4 Tsp Fenugreek Powder (If you don't have this as powder, you can just use fenugreek seeds)
2 Tsp Chilli Flakes
1 Tsp Amchur Powder
1 Tsp Corn Flour
1 1/2 Tsp Salt
1 Tbsp Sugar
1 1/2 Tbsp Tomato Powder/Tomato Soup Powder/Masala Cheese Powder
2 Tbsp Oil
1 Onion Sliced
1 Capsicum Sliced
1/4 Cup Beans Chopped
1/4 Cup Carrot Chopped
1/4 Cup Peas
Salt as required

What you do:

  • In a blender, blend the onion powder, garlic powder, ginger powder, coriander powder, chilly powder, turmeric powder, black pepper powder, cumin powder, fenugreek seeds/powder, chilly flakes, amchur powder,cornflour, salt, sugar and tomato powder/tomato soup powder/masala cheese powder. This is the maggi tastemaker and can be kept stored in an airtight box after use in this recipe.
  • In a pan, heat oil and saute onions, capsicum, beans, carrots and peas till they are cooked. 
  • Add 3 to 4 Tsps of Maggi tastemaker or as required and mix it well with the vegetables.
  • Adjust salt and add the cooked noodles.
  • Toss them well and serve!
