Mediterranean Chick Pea Salad

Salads are refreshing. We have our versions of salads in India and it involves kosambari types, just the pepper, salt and lime type salad. But I have always wanted to experiment and explore and made this Chick Pea Salad that comes under the Mediterranean cuisine. It was surprising to know how often they use chick peas and feta cheeses in their dishes.

In this recipe instead of feta cheese, I have used our cottage cheese or paneer, feel free to use feta if its available. And yes seasoning is an important aspect in salads and when I decided I will start making them more often, I ventured out and brought some supplies for making the seasoning. The actual seasoning uses parsley and I have substituted it with fresh coriander leaves.

Mediterranean Chick Pea Salad:

This involves 2 steps,
1. Make the Lemon-Coriander Vinaigrette Seasoning and
2. Tossing it with the vegetable.

Lemon-Coriander Vinaigrette Seasoning:

What you need:

1/4 Cup Olive Oil
1/4 Cup White Wine Vinegar
1 Tbsp Lime Juice
1 Tbsp Fresh Coriander chopped finely
1/4 Tsp Chilly Flakes
Salt as required
Black Pepper Powder as required.

What you do:

In a bowl or container, mix all the ingredients for the seasoning and shake well and keep aside.

Salad:

What you need:

2 Cups Chick Peas boiled
1 Cucumber chopped
1 Onion sliced finely
1 Capsicum chopped finely
200 Grams Paneer crumbled

What you do:

In a large bowl toss all the vegetables and mix the seasoning well and serve!
