Tibbs Style Paneer Frankie

Most of my school and college days have been spent buying this frankie rolls and when I could not get the same taste today, it seriously disappointed me, thus leading me to make one at home!

Frankies and Khatti Roll are different in their masalas. Khatti rolls are popular Kolkatta Street food while Frankie is a popular Mumbai Street Food.

Tibbs Frankie is a popular Frankie brand and we can often find them in roll carts in most places in Chennai. Originally from Mumbai, this brand has a wonderful story behind it. The brain behind the brand Mr. Amarjit Singh Tibbs on a stopover at Beirut had a chance to taste a Lebanese Pita Wrap with a variety of stuffings and wanted to recreate it once he was back at his home in Mumbai. Along with his wife, after years of research they created an Indian version of the Pita wrap and named it after their favourite cricket player Frank Worrell.

Today they are still making these Frankie rolls in vegetarian and non vegetarian versions and my favourite has been the Paneer one and the one I get today near my place was so oily and greasy that I decided to replicate it at home.


Paneer Frankie:

There are four stages to making this Frankie.
1. The Dough
2. The Frankie Masala
3. The Paneer Filling
4. Assembling the Frankie

1. The Dough:

What you need:

1 Cup Atta Flour
A Pinch of Salt.
Water as needed

What you Do:

The original Frankie is made with Maida, but we want to be healthy here so I made our usual chapathis. Yes. just mix the dough into chappati dough and make 5 to 6 chappathis as you usually do.

2. The Frankie Masala:

What you need:

2 Tsp Chilly Powder
2 Tsp Coriander Powder
2 Tsp Cumin Powder
2 Tsp Amchur Powder
1/2 Tsp Black Pepper Powder
1/4 Tsp Turmeric Powder
1 Tsp Salt (Black Salt if you have)

What you do:

Mix all the spice powder in a bowl and this can be stored in an air tight container for future use after using it here. Just don't forget to name the box, in case you forget!

3. Paneer  Filling



What you need:

1 Tbsp Oil
1 Tsp Cumin Seeds
1 Onion
2 Medium sized Tomatoes
3 Tsp Frankie Masala
200 Gms Paneer cubed
1 Tsp Kasuri Methi
Salt as required

What you do:

  • Grind the Onion and Tomato in a blender.
  • Heat oil in a pan, add cumin seeds and let it splutter.
  • Add the ground onion and tomato mixture and saute well till the raw smell goes.
  • Add the Frankie Masala and adjust salt.
  • Mix and saute for a a couple of minutes before adding the Paneer cubes. 
  • Add water if required (The masala needs to be thick as only then it can be spread, but to avoid burning add water as required) and simmer for 10 minutes.
  • Add Kasuri Methi and switch off the stove.
4. Assembling the Frankie:

What you need:

3 Sliced Green Chillies
2 Tbsp Vinegar
1 Cup Grated Cheese of choice (Use Mozarella, Cheddar or Amul Processed Cheese or a combination)
1 Onion chopped finely
6 Chapathis
Paneer Frankie Filling
Aluminium Wrap.

What you Do:
  • Add the sliced green chillies to the vinegar and keep it aside for 10 to 15 minutes.
  • In a chapathi, add some panner filling, onions, marinated green chillies and cheese in the centre.
  • Fold the chapathi into a wrap and if possible use a paste of atta flour and water and seal all sides except the top. 
  • Heat a tawa and keep the rolled chapathis on the hot tawa for a few minutes flipping both sides carefully till the cheese melts a little.
  • Take this roll to an aluminum wrap and wrap it tight and serve. 
For kids, you can completely skip the marinated green chillies. Meenu and Nallu finished these in no time making me so surprised and it was much better than what I get here as it was less oily but more yummy. I almost got the masala flavours right as we get in Tibbs, the secret ingredient here is the amchur powder to get the taste just like them.
