Thai Drunken Noodles - Pad Kee Mao

Pad Kee Mao in Thai roughly translates to Drunken Noodles! There are many versions as to why this name came about for this noodles. One is that it was very spicy, you will end up drinking so much of water or whatever liquid you choose to consume in that meal 😉. Another version is that, a drunk man once came home and just tossed together whatever he had at home and made this noodles, while yet another version is that - this is the most wanted dish of the drunk folk in Thailand!!! 😜

Pad Kee Mao:

There are three steps involved,
1. Make the Noodles
2. Make the sauce.
3. Stir fry the veggies and toss everything together.

Noodles:

What you need:

1 Cup Flat Rice Noodles (I get from Real Thai)
4 Cups Hot Water

What you do:

  • Boil 4 cups of hot water and switch off the flame and immerse the noodles and soak it for 5 minutes till soft.
  • Drain and wash in cold water to stop the cooking process and keep aside.
Pad Kee Mao Sauce:

What you need:

1 1/2 Tbsp Soy Sauce
1 Tbsp Vegetarian Oyster Sauce
2 - 3 Tbsp Siracha or Red Chilli Sauce (Adjust as per spice level, I used 2 Tbso in my recipe)
2 Tsp Brown Sugar.

What you do:

Mix all the ingredients and keep aside.

Pad Kee Mao Noodles:

What you need:

1 Tbsp Oil
1 Onion Sliced
1 Capsicum Sliced
1 Tomato Sliced or 10 Cherry Tomatoes Halved
1/4 Cup Cabbages Sliced
1 Carrot Cut Into Sticks
4- 5 Garlic Cloves Chopped
Salt As Required

What you do:
  • Heat oil in a wide bottom pan.
  • Add all the vegetables except the tomato and stir fry them in high heat till cooked.
  • Add the tomatoes and saute till little mushy.
  • Add the sauce and salt and mix it well.
  • Add the rice noodles and toss well on high heat for a minute before switching off.
  • Serve and enjoy.
You can add any mix of vegetables. Pan fried Tofu and Paneer can be added. If you fancy, you can also add some boiled shredded chicken!
